To illustrate the exchange of ingredients that the Silk Road facilitated, you’ll make a batch of North Indian-Style Eggplant that uses nine different spices—and come to understand why unique variations of this same dish appear in Persia and elsewhere. Then, we move forward in history to the era of the Spice Route, a network of maritime trade lines stretching from Portugal to Indonesia to the Americas. You’ll learn how chiles proliferated across the world and employ smart techniques to amplify their flavor as you make a batch of Malabar-style shrimp curry, which also happens to be a dish that Radhika learned to make alongside her maternal grandmother.
