Joe Woodhouse has been vegetarian since he was ten years old. In the decades since, he has quietly become one of the most respected vegetarian cooks working today. In this livestream class, Joe will walk you through two weeknight-friendly dishes that deliver on this promise. He'll start with brothy butter beans with steamed dumplings, a one-pot meal that comes together from a short list of pantry staples. You'll learn how to trick canned beans into becoming the best thing you eat all week and employ Joe's favorite trick to lighten and brighten them. The dumplings use boosted versions of each ingredient: spelt flour instead of humdrum all-purpose; yogurt or kefir instead of plain old milk; and tons of dill instead of a halfhearted pinch. Joe will share the details that keep them light and tender all the way down to the moment you are allowed to remove the pot lid. In his second dish, Joe shows you what simple semolina is capable of. Enriched with stock, milk and sharp cheddar, set until firm and pan-fried to crispy and golden, it becomes an extraordinary base for a summery salad of tomatoes and herbs. Joe will arm you with the tips and tricks necessary to avoid heavy, clumpy semolina and offer inspiration for other ways to prepare this versatile ingredient. By the end of class, you'll have learned two satisfying vegetarian dinners—not just dishes, but entire meals—designed for the rhythms of real life.

About Joe:
Joe Woodhouse has been vegetarian since the age of 10, teaching himself how to cook. He later trained as a chef and spent years working in kitchens such as Vanilla Black and the Towpath Café, as well as contributing to events with restaurants such as the Quality Chop house. Alongside being a chef, he is also a photographer, shooting with clients such as Soho Farmhouse, Belazu, Marmite, Asda, Hakkasan, and Coleman's. He is lauded amongst colleagues - including Anna Jones and Nigella Lawson - for being the best vegetarian chef in the business. His work has featured in publications such as The New Yorker, Bon Appétit, Guardian, Observer, Metro, Evening Standard and Life & Thyme.
