Gather around the butcher's block to learn everything you've ever wanted to know about breaking down a whole beef!
We will be demonstrating the breaking down of a beef leg and drop loin, cleaning and identifying all the steaks, and discussing where each muscle is and how to use it. Some of our favorite cuts come from the beef hindquarter- strip, tenderloin, flank, bavette, sirloin, picanha, round roast, merlot, and shank to name a few.
We'll eat some snacks, try some charcuterie, and drink some beers!
