Your cheese boards don’t have to be that way—and if you do it right, you may realize that a thoughtfully composed cheese board can be an entire dinner. Join guest teacher Zoe Brickley of Jasper Hill Farm for a livestream class that will give you a renewed appreciation for great cheeses. First, Zoe will take you on a virtual tour of Jasper Hill’s production facility and cellars, giving you a behind-the-scenes look at how great cheeses are really made. Zoe will help you to group cheese by category, meaning you can be smart about substitutions and cooking techniques for everything from bloomy-rind soft cheeses to cider-aged blues to clothbound cheddars. Then, she’ll cover the basics of pairing cheeses—and we don’t only mean with wines. You’ll learn how to pair cheeses with fruits, spices, jams and breads to bring cohesion to your boards and meals all season long. And she’ll give industry tips on preparing cheese for sharing, including essential information about packaging, temperature and storage that will change the way you treat cheeses forever. About Zoe Brickley: Zoe began exploring the world of cheese while attending The French Culinary Institute, NYC. From there she took on the role of Cave Manager and American Buyer at Murray’s Cheese after some time spent behind the counter. In 2009, Zoe joined the team at Jasper Hill Farm where she led foundational Sales &amp; Marketing efforts for the growing company. Currently, she Directs Jasper Hill’s Communications, E-Commerce, and Creative works. Zoe loves to learn more about cheese through teaching, having presented hundreds of hours of content for many organizations, including a recurring course for Stanford University’s Continuing Studies program. She is an American Cheese Society Certified Cheese Professional &amp; Sensory Evaluator (ACS CCP, CCSE), Board Member of the Vermont Cheese Council, and a member of the Guilde Internationale des Fromagers.
