Pimento Cheese with Homemade Pickles Fried Pickles Pickle Brine Martini Description: Yes: that’s the answer to “Can I pickle this?”—or at least, it’s very often the answer. If you think pickling stops at cucumbers and onions, you need to join this livestream class with guest teachers Steve McHugh and Paula Forbes, authors of the new book “Cured: Cooking with Ferments, Pickles, Preserves &amp; More.” They’ll start by broadening your pickle horizons, proving that you can pickle just about any fruit or vegetable. They’ll teach you a base pickling recipe and provide recommendations for how to adjust your brine or technique for certain picky pickles, like cauliflower or even winter squashes. A pickle alone does not a meal make, however, so they’ll then show you how to transform your pickles in three ways. Their favorite pimento cheese doesn’t have pimentos in it at all: instead, homemade pickles brighten up a creamy blend of cheeses and spices that’s great on crackers or sandwiches. Their cornmeal-crusted pickles—and we mean any pickles, not just cucumber spears—are the ideal combination of crisp and juicy. And their pickle brine martini is a playful, flavorful spin on a beloved classic. All together, these dishes make for a light dinner or happy hour spread whose secret weapon is little more than the combination of vinegar, salt and a bit of patience. That’s the power of pickling. About Steve &amp; Paula: Steve McHugh is a six-time James Beard Foundation Award—nominated chef based in San Antonio. He grew up on a farm in southern Wisconsin and spent the early part of his career in New Orleans, before he and his wife, Sylvia, settled in San Antonio.
