She returns to Milk Street to share recipes from her new book, "İstanbul: Delicious Recipes from the Heart of the City," a celebration of the city's diverse and multicultural food culture. We start with gözleme, one of İstanbul's most beloved street foods. In İstanbul, these stuffed filo parcels would be made with yufka sheets, but Özlem will show you how store-bought filo and a non-stick pan get you to the same satisfying result: a crispy, golden pocket filled with spinach and melty cheese that comes together faster than you'd expect. Next, you'll make Circassian chicken, a dish that speaks directly to İstanbul's multicultural identity. With its origins in the Ottoman Palace kitchens of the 19th century, this dish now enjoys a place of prominence in the city's meyhanes (tavernas) and lokantas (restaurants). Özlem's adaptation of the dish uses weeknight-friendly chicken breast and thighs instead of a whole chicken, but keeps the recipe's quintessential walnut sauce and drizzle of pul biber oil. On the sweet side of things, you'll learn to prepare şekerpare, one of the most popular sweets in Türkiye for over 500 years. As you bake them, you'll learn about variations of this cookie that appear throughout the Balkans and Middle East.
