When the days are long, the nights are short and local produce is at its peak, there’s even more time to ponder the question: what should we eat? Join Danish guest teacher Trine Hahnemann, author of the new book “Midnight Sun,” to learn how to approach summer cooking with the simplicity and strategy of the greatest Scandinavian home cooks. We start with köttbullar—Swedish meatballs—which Trine makes in a way that will surprise you. Bearing no resemblance to the Swedish meatballs produced en masse at IKEA, these meatballs include a quartet of unexpected ingredients: parsnip, anchovy, warm spices and a splash of sparkling water. To serve alongside your platter of meatballs, you’ll also learn to make golden, crispy Danish rösti, a potato flatbread that counts just three ingredients. It’s ideal served with a scoop of rygeost, a Danish smoked cheese, but Trine will teach you a clever way to recreate its texture and flavor with common grocery store ingredients. Because it’s not summer in Scandinavia without strawberries, we round out the meal with an elegant strawberry and elderflower fizz and Trine’s favorite warm-weather dessert: a tart-sweet compote swirled together with rich milk or cream.
