Our Small Group Workshops give you personalized attention from Milk Street instructors, staff, recipe developers and special guest chefs from all over the world. In these small classes - capped at just 25 attendees - you'll get your questions answered in real time, take on culinary experiments and tastings, brainstorm new applications of the skills you learn and problem solve together with other students. Bay, rosemary, chamomile, thyme, rose: Are we in the garden or in the kitchen? Join guest teacher Rose Wilde for an advanced two-session intensive that transforms the way you think about flowers, botanicals and herbs in baking. Over two consecutive 90-minute livestream classes, you'll explore ingredients that even experienced bakers find challenging: fragrant botanicals that can elevate desserts when handled with precision but turn soapy or overpowering when misjudged. Rose will guide you through the techniques that make the difference. In the first session, we’re working with savory herbs in sweet applications. You'll make a deeply aromatic rosemary syrup that extracts flavor without bitterness, then learn the gentle art of infusing cream with bay leaves for a custard that tastes like winter holidays. Rose will demonstrate how to incorporate fresh thyme and lemon into tender shortbread with a salted sugar edge, and you'll practice the delicate process of creating sugared basil leaves—crisp, jewel-like garnishes that shatter beautifully over finished desserts. The second session focuses on floral aromatics and how to use them without crossing into perfume territory. You'll make a chamomile lemon custard using a double boiler method that coaxes out honey-sweet notes, then bake an elderflower vanilla cake that balances brightness with restraint. Finally, you'll learn Swiss buttercream technique and discover how to incorporate orange blossom or rose water with the kind of control that keeps these powerful aromatics in check. This is a class for confident bakers ready to refine their intuition and expand their flavor vocabulary.
