For Sheldon Simeon, the James Beard Award-nominated chef and author of the new book of "Ohana Style," it means drawing from the rich, layered food culture of Hawaiʻi, where Filipino, Japanese and Korean traditions that have woven themselves into the islands' everyday kitchens. In this livestream class, Sheldon will guide you through three recipes that capture this spirit of abundance and exchange. First, you'll make Zucchini Jun, which is not so much a recipe as a template asking to be applied to a wide range of produce. In Sheldon's words, you're better of thinking of jun not as a noun but a verb: you can jun almost anything, by which we mean carefully dredging it and frying to a crisp golden brown. Served with a creamy, slightly funky gochujang dipping sauce, these zucchini chips make a crowdpleasing appetizer, though Sheldon will also lay out his approach to turning them into a full entrée. Then, we make a batch of Bistek Bites, a playful riff on a Filipino classic that gets the best of both worlds: a proper sear on cubed rib-eye, plus a glossy pan sauce that uses classic French techniques but takes them by surprise with the addition of ingredients that are close to Sheldon's heart. Finally, Sheldon will walk you through his Chicken Adobo Fried Rice, a dish that captures the genius of Filipino adobo—namely, the interplay of vinegar, shoyu and garlic—and turns it into a weeknight fried rice that doesn't require either pre-cooked rice of leftover braised adobo.
