But for all that complexity, the food that guest teacher Ranie Saidi makes is still refreshingly doable for any home cook. Join Ranie, the author of the new book "The Malay Cook," for a livestream class that will shows you the unique ways that Malaysian cooks marry sweet with sour, fresh with rich and salty with spicy. We'll start where Ranie starts at his celebrated supper clubs: with Kerabu Oren, a citrusy salad dressed in fresh orange juice, lemongrass and bird's eye chiles that opens up the palate and sets the tone for everything to come. Next, you'll learn to make Sambal Racik Ayam, Ranie's Malay take on chicken salad. You'll poach and shred chicken, then build a sticky, sweet sambal with caramelized onions, lemongrass and cherry tomatoes. (It's so good that we almost don't want to call it chicken salad, lest visions of the gloopy stuff in the deli section come to mind.) Finally, Ranie will walk you through Ikan Masak Tomato Jintan Manis, a cumin and tomato fish stew that draws on the Malay tradition of pairing fenugreek with fish. It comes together in under 30 minutes but tastes like something far more involved.
