Our Small Group Workshops give you personalized attention from Milk Street instructors, staff, recipe developers and special guest chefs from all over the world. In these small classes - capped at just 25 attendees - you'll get your questions answered in real time, take on culinary experiments and tastings, brainstorm new applications of the skills you learn and problem solve together with other students. She pairs birds’ eye chiles with basil, ghost pepper with whiskey and serrano with lemongrass. In this livestream workshop, you’ll learn the step-by-step process of safely creating three unique hot sauces from your favorite seasonal ingredients: tangy and refreshing Cucumber Mustard Hot Sauce, sweet and fiery Habanero Peach Hot Sauce, and bright and bold Cherry Bomb Pepper Hot Sauce. Each of these hot sauces includes two kinds of fruits: hot chiles and a milder one, whether it’s vegetal cucumber (technically a fruit!) or sweet summer peaches. This gives us the opportunity to explore the nuanced challenges of pairing heat with sweetness and matching a chili’s underlying flavor with the character of other produce. You’ll also learn how to tweak the recipes to make them hotter or milder according to your taste. Any of these hot sauces could simply be stored in the fridge, but if you want to give them as gifts or keep them until the doldrums of winter, you’ll need to get comfortable with the process of water bath canning. Sarah will cover all the essential canning safety techniques, from proper ingredient preparation and acidity levels to the must-have tools and strategies to avoid breakages and failed seals. Whether you’re a hot sauce fiend or curious about canning—or both—this workshop is for you. About Sarah: Sarah Marshall is a born and raised Oregonian who has been making and selling spicy sauces along with her husband, Dirk, since 2011. From day one, they’ve been driven by Sarah's passion for preserving Oregon's incredible local agricultural bounty. By 2012, they'd gone from making 12-jar batches in our home kitchen to making 200 jar batches in a commercial space. They also teaching canning classes to spread the love for the art of preservation.
