Our Small Group Workshops give you personalized attention from Milk Street instructors, staff, recipe developers and special guest chefs from all over the world. In these small classes - capped at just 25 attendees - you'll get your questions answered in real time, take on culinary experiments and tastings, brainstorm new applications of the skills you learn and problem solve together with other students. Many small ones. In this advanced livestream baking workshop, Rose Wilde, author of "Bread and Roses," makes the case that small-format cakes are more than adorable: they're an invitation to think carefully about the proportion, balance and design of a perfect bake. Plus, cupcakes introduce unique challenges and opportunities for decoration that are distinct from those used for layer cakes. In this 90-minute workshop, Rose will use her coconut chiffon cake as the foundation for these lessons. Though it can make a great full-sized cake, it’s even better as cupcakes. We’ll move briskly through the mixing, portioning and baking of the cupcakes, lingering on the defining features of chiffon cakes and the ways Rose likes to tweak and customize the batter. We’ll spend most of our time on decoration using spring ingredients like rhubarb, citrus, cherries, berries and fresh herbs. We’ll transform these ingredients with a matrix of different techniques, including turning some into jam, sugaring others and using creative knife work for the rest. You’ll make a batch of perfect Swiss buttercream—Rose’s preferred buttercream variety; she’ll explain why—and practice using both piping bags and offset spatulas to achieve different effects with the frosting. Then, it’s time to play with these components to create a stunning display of cupcakes. Throughout the workshop, Rose will address the challenges that trip up even experienced bakers at this scale: how to scale recipes accurately without sacrificing texture, how to choose and apply frostings that hold up beautifully whether they're going straight to the table or traveling to a friend's house, and more.
