Milk Street's Creative Director of Recipes and Products Matt Card has a self-described carb problem—and he makes fried noodles several times a week to feed it. In this livestream workshop, which is capped at just 25 attendees, Matt will give you a practical framework for making this weeknight staple without cracking open a cookbook. This workshop consists less of recipes than of decision trees, templates and a generous dose of Milk Street's cooking theory. To guide this exploration, we draw upon three distinct noodle traditions: Indonesian mie goreng built on sweet soy and lime; yakisoba, where ketchup is not a shortcut but an ingredient; and Korean fried noodles sharpened with gochujang and sherry vinegar. Matt will walk you through the pros and cons of his go-to noodle options—like fresh vs. dried ramen and udon and his personal favorite, the wavy-edged Taiwanese dao xiao mian—and explain why noodles cooked ahead and cooled fry up better than noodles straight from the pot. Then we discuss how to prepare a range of proteins from chicken and pork to tofu and eggs; no matter which protein you choose, our essential lessons are how to use a small amount of these ingredients and maximize their flavor. Vegetables are next, divided according to Matt’s framework according to their flavors, textures and relative ease of preparation (hint: frozen peas are a friend to every home cook). Finally, the key to making a batch of fried noodles feel like a restaurant-worthy creation is in the garnishes. You’ll decide whether you’re in the mood for Matt’s crispy fried shallots or a a big sprinkle of furikake, some slices of DIY pickled ginger or a snow mound of shaved bonito flakes. The deeper lesson of this workshop is flexibility. You’ll come away able to look at a ragtag bunch of ingredients in the fridge and see the path to a truly exceptional homemade meal.
