What’s on the Menu: All About Choux Pastry Homemade Crullers Caramel Basics + Infusions &amp; Flavorings If you think crullers can only be produced by bakeries with industrial-scale fryers, think again. Tanya Bush, author of "Will This Make You Happy," is here to prove that this beloved donut is well within reach of home bakers. In this livestream class, you'll learn to make classic crullers from scratch, then explore how to make them your own. We'll start with choux dough, the foundation of crullers, éclairs and cream puffs. Tanya will walk you through the process step by step, demystifying this surprisingly simple dough that relies on technique rather than complicated ingredients. You'll learn how to achieve the right consistency and see why choux behaves in the unique way it does. Then comes the fun part: piping your crullers into their signature twisted shape. Tanya will demonstrate how to get clean lines and confident swirls even if you've never used a piping bag before. Next, we'll tackle frying. You'll learn how to maintain the right oil temperature and achieve golden, crispy crullers with airy interiors. While your crullers cool, Tanya will teach you how to make a classic caramel glaze and share ideas for flavor variations from vanilla bean to espresso to citrus.
